Ferals Favorite Vegan Mac and Cheese.

I have been cooking since I would say around the age of 5 when my mum taught me to make meringues, my grammie taught me to make cakes which was always difficult as a child who had allergies to dairy, certain fruits, meats and a fair amount of E numbers. It made my love for cooking even more adventurous, not to mention lots of hilarious fails!

Since having kids 9 years ago, I followed my families suit, did what I knew and cooked from scratch. Learning more and more as I cooked and experimented in the kitchen. Challenging myself with cooking for friends and family who are, vegan, vegetarian, coeliac to mention a few.

We all know kids can be fussy it can take up to 10 times for them to ‘like’ a food, not to mention any sensory issues you come across when introducing those smooshy foods! So these recipe are something my kids are liking and making the transition to veganism easier for them.

I looovee making and adapting new recipes so here is one that the kids are loving at the moment it took a few different variations but this is their fave! Plus if you make extra sauce, you can use it for cauliflower cheese too!

Vegan Mac and Cheese.


  • 400g of pasta (we like mac and cheese pasta)

  • 1/3 Cup of coconut oil

  • 1/3 Cup of flour ( you can also us gluten free)

  • 2 Medium Sweet Potatoes

  • 2 Cups of Non dairy milk ( we use cashew or oat)

  • 2 Cloves of Garlic

  • 1Tsb of mustard ( Try Reds North Carolina Mustard BBQ Sauce.. YUM)

  • Few shakes of nutmeg

  • 2 TBLS Nutritional Yeast

  • salt and Pepper


  • Cook the sweet potatoes

  • -Baking, prick and bake for 40 minutes on 200C

  • – Boiling, peel and quarter boil for 10-15 minutes till soft and drain

  • -Microwave, cut into chunks of 3cm by 3cmish bung it in a microwaveble dish add 50ml of water and cook for 3-4 minutes till soft and drain.

  • Cook the pasta as it instructs on the packet

  • Melt the oil in a saucepan

  • Add the flour and whisk to a paste, add the milk that you have chosen and whisk, Leave this to thicken for a few minutes whilst whisking it.

  • Add the Garlic, Mustard, nutmeg, nutritional yeast and stir some more.

  • Mash the sweet potato till smooth and add that too the mix

  • Stir a few more times adding salt and pepper to taste.

  • Add the pasta and serve.


Naturally pasta has very little nutritional value, but it fills kids up and is a favorite in our house for such energetic children who spend most of their days outside.

Sweet potatoes however are a great! A huge source of Vitamin A (an all rounder for the body to function) pantothenic acid (helps hormones, digestive tract, red blood cells, and and the usage to absorbing other vitamins) Vitamins C, B6, B1 and B2. Not to forget  manganese, copper,  potassium, dietary fiber, niacin and phosphorous.

Nutritional yeast not only adds flavour to the foods your making but is a source of B12.
